Baked fillet of tuna with P.D.O. Kalamata olive oil Minerva

INGREDIENTS
1kg fillet of tuna
1 ½ cups P.D.O. Kalamata olive oil Minerva
2 medium onions finely chopped
1 small bunch parsley, finely chopped
1 ripe tomato diced
1 ripe tomato cut in slices
1 tsp oregano
Juice of 1 lemon
salt
pepper
EXECUTION
Combine finely chopped onions and parsley and rub tuna fillets with mixture.
Place fish in pan.
Place a slice of tomato over each fillet and spread diced tomato around tuna.
Sprinkle each fillet with oregano, salt and pepper.
Drizzle fillets with P.D.O. Kalamata olive oil and lemon juice.
Bake in oven at 180oC for about 50-60 minutes or until fish is soft and flaky.
