Chicken fillet with Minerva feta cheese & mint filling

INGREDIENTS
4 chicken breasts
some mint
400gr. feta cheese Minerva
salt
pepper
P.D.O Kalamata extra virgin olive oil
EXECUTION
Open the 4 fillets in the middle.
Salt and pepper and fill with Minerva feta (100gr in each) and some mint.
Close the fillet placing a toothpick on both sides to keep the filling inside.
Oil the fillet well and place on the grill or in the oven set at 200ο degrees Celsius.
Grill on both sides until golden brown.
Remove the toothpicks before serving.
May be served with aromatic rice boiled in water with basil and cinnamon.
